Try to get a stamp from your HR on the slips. Or some companies also provide a letter of employment to prove that you are still on the payrolls of the company.
Btw I could get similar computer generated pay slips attested from a gazetted officer during my GE-PI last year. You too can try your luck.

What are the norms for fee refund ? Or if we get selected to other symbi inst and would like to change than ? For example, Closing date for SICSR is 4th march where as SCIT declares its merit list later on ?
Can we pay up SICSR and later on convert it to SCIT, if selected ? Plz reply.

Hi ,
Joining letter and last 3 months payslip (computer print outs) should suffice.
Your electronics background wont be a big hindrance as you have 3 year IT exp , just perform well in GE/PI and im sure you will have good chances of converting.

Check their batch profile on their site. I can see a decent number of students from Non IT background. If your interview date doesn't clash with any other college(in which you are more interested) then I don't see any harm in trying once. Just an aspirant's opinion and not an expert one.
